The menu imagined by Alain Ducasse to celebrate the 25 years of the Louis XV simultaneously pays tribute to nature which presents here all of its treasures and to those who are its modest craftsmen. Exalting the truth in all produce without impairing them, searching for the source of the flavor, the chef only interprets with measure and humility what nature has offered. This is the culinary philosophy of Alain Ducasse written over the years at the Louis XV.
It is at the Louis XV that Alain Ducasse trained and still trains most of his chefs, the same chefs who then go on to carry his gastronomy to the four corners of the world. Across the globe, all his chefs are celebrating with the same enthusiasm the 25th anniversary of the Louis XV : From New York to St Petersburg, from Hong Kong to Las Vegas, from Paris to London, all are drawn together in this event, paying tribute to the Louis XV by creating a Riviera-inspired dish for their menu and/or the Louis XV signature dessert, the Baba au rhum comme à Monte-Carlo.
